Summertime is the perfect time of year for hosting backyard BBQs and I love it because I am able to show off some of my favorite recipes to my friends and family. I particularly love this time of year because all of my favorite fruits are in season and making them look presentable is so effortless. I like to keep my Summer recipes light and fresh and thought I would share with you one of my absolute favorite salads! I made this the other day for the 4th of July and it was such a hit with my family so I hope you love it too!
Peach Caprese Salad
Serves 4-6
This salad is an exciting twist on a classic Italian dish. Peaches are one of my all-time favorite fruits so I love to incorporate them into almost everything when they’re in season. Also – tomatoes are to-die-for right now. The heirloom tomatoes I bought the other day could definitely be eaten all by themselves. With the peaches juicy flavor and the tomatoes sweetness, it pairs perfectly with the mozzarella and basil. Plus- it looks so nicely after its plated that you really can’t go wrong!
Ingredients | Directions |
5-6 peaches 5-6 vine tomatoes 2 (8oz) packs mozzarella Fresh basil leaves Balsamic Glaze |
1. Slice the peaches, tomatoes and mozzarella, and layer onto a dish or plate with basil. Layer on top of each other so each slice is overlapping slightly. Drizzle with Balsamic Glaze before serving. |
