Vegan Pumpkin Spice

 

As most of you know, after my birthday I am dedicated to the holiday season. Yes, that means that after August 6th, [in my world] it is officially Fall. That being said, when Fall rolls around, I become the most basic of basic girls (hard to believe, right?). I love everything pumpkin and have a planned out Fun Fall Activities List. A couple years ago, the first thing on the agenda would have been grabbing my very own Pumpkin Spice Latte from Starbucks and savoring every pumpkiny second, however, once I learned about the ingredients in that little cup of chemicals, I decided to come up with a drink of my own.

I decided to cut out coffee a while ago and make the switch to green tea, which has done wonders for my skin and digestive track, but I miss that comforting taste (and smell) of a Fall drink. I had to come up with a healthy alternative, and I did. Not only is this drink only 100 calories (about 320 calories less than the original PSL), but it can be sipped on before bed, which is a big win for me. And for you coffee lovers, you can still add coffee to this recipe if you’d like. I wouldn’t take that away from you. Also Bailey’s. Bailey’s is always good.

This yummy little drink only has 4 ingredients and can be whipped up in 5 minutes. You also get the added benefit of the Autumn aroma throughout your house (another big win). This drink is organic, dairy free, gluten free, & soy free with no artificial ingredients or “flavorings” and will leave you just as, if not more, satisfied than if you were drinking the original PSL. Enjoy!

INGREDIENTS

  • 2½ cups unsweetened vanilla almond milk
  • 2 tbsp pumpkin puree
  • 2 tbsp maple syrup
  • ¼ tsp cinnamon
  • coffee (optional)
  • optional: vegan whipped cream + cinnamon stick to garnish

INSTRUCTIONS

  1. Whisk together all ingredients low heat in a saucepan until desired temperature is reached no clumps are left.
  2. add ingredients to your coffee if desired
  3. Serve hot – added bonus if you serve in an apple!
